Our San Miguel Mezcal Tasting Program:
You will learn the origins of mezcal and the importance of this drink in Mexico: The types of agaves used in making Mezcal (33), the unique process of making Mezcal, and the substantial differences between mezcal and tequila.
We'll start by explaining the protocol we will use to taste Mezcal involving appearance, smell, texture, and taste. It is a complete sensory immersion.
Mezcal is a very complex drink, and you will be challenged to identify the different flavors and notes. You will taste a variety of mezcales from our exclusive selection. You'll learn the difference between artisanal, ancestral, and industrial mezcal.
You will also experience my video of the Mezcal-making process to see the fascinating techniques used in transforming agave juice into the deeply spiritual spirit of Mezcal.

Mezcal - the Most Complex Spirit in the World
Mezcal is spiritual and cultural and historic. Scientists date evidence of the first distillation back to Mesoamerican times. It is deeply woven into the fabric of Mexican culture. Mezcal is humble, rustic, brazen, fiery and romantic. It's used to celebrate the births of children, used to sanctify marriages and drank to commemorate the dead at funerals. It's used as medicine to heal the body and soul, and consumed in rituals to symbolize fertility and the return of the rainy season.
